Possibly The Most Tasty and Nutritious Cereal of All Time
Rob Walker | JUN 7, 2023

Introducing my irresistible keto cereal blend packed with nature's powerhouse ingredients! Each bite of this nutritious goodness is meticulously crafted to provide you with a wide range of health benefits.
I’ve been making this cereal for more than five years and I still love it with added Greek yogurt, kefir, and oat milk. See the recipe below.
There are no grains in this cereal and it’s a lot cheaper and healthier than most store-bought cereal!
Boxed granola is usually much higher in sugar, carbs and packed with unnecessary ingredients and fillers.
Before you get to the recipe, here's a tantalizing summary of the nutritional value you'll find in every bowl:
Protein Powerhouse: My cereal contains a blend of walnuts, pecans, cashews, and sliced almonds, delivering a satisfying dose of protein. This helps support muscle growth, repair, and maintenance, keeping you energized throughout the day.
Essential Fatty Acids: Feast on the heart-healthy fats found in pumpkin seeds, sunflower seeds, and flaked coconut. These natural sources of essential fatty acids provide omega-3 and omega-6 fatty acids, supporting brain health, reducing inflammation, and promoting a healthy heart.
Supercharged Seeds: Chia seeds steal the show with their remarkable nutritional profile. These tiny powerhouses are loaded with fiber, antioxidants, and omega-3 fatty acids. They contribute to a healthy digestive system, promote satiety, and offer anti-inflammatory benefits.
Nutrient-Rich Goodness: Embrace the nutritional treasure trove of vitamins and minerals found in my cereal blend. You'll enjoy a wealth of essential nutrients like magnesium, iron, zinc, and vitamin E, which support various bodily functions, including immune health and cell regeneration.
Natural Energy Boost: The combination of wholesome ingredients like coconut oil and flaked coconut provides a source of sustained energy. Medium-chain triglycerides (MCTs) found in coconut oil are easily digestible and can provide a quick source of fuel for your body and brain.
Fiber for Digestive Health: A generous amount of fiber from the nuts, seeds, and coconut flakes aids in digestion, promotes a healthy gut microbiome, and supports regularity. Enjoy a balanced and happy digestive system with every spoonful.
Irresistible Taste: I've carefully curated this cereal blend to not only offer exceptional nutritional value but also to tantalize your taste buds. The harmonious combination of crunchy nuts, toasty coconut, and a medley of seeds creates a delightful and satisfying flavor experience.
Start your day right with this wholesome and nourishing breakfast option that fuels your body, supports your well-being, and leaves you feeling nourished from the inside out.

Total Time

Ingredients
I make double this quantity in two separate bowls so it lasts longer.
1 cup sliced almonds
1 cup chopped pecans
1 cup chopped walnuts
I cup chopped cashews
1 cup unsweetened flaked coconut
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
1/3 cup Chia seeds (from Costco)
1/4 cup golden monk fruit sweetener or other non-sugar equivalent like Costco’s Volupta Erythritol & Monk Fruit
1 teaspoon ground cinnamon
Pinch of fine sea salt, or pink Himalayan salt
1/3 cup coconut oil melted
1 egg white
1 teaspoon vanilla extract
Instructions
Preheat the oven to 300 degrees F. Line one to three baking sheets with parchment paper. Set aside.
1. In a large bowl (or two if your are making double the quantity, combine all the nuts, seeds, coconut, sweetener, cinnamon & salt.
2. In a separate bowl, whisk together the melted coconut oil, egg white and vanilla extract. Pour over nut/seed/coconut mixture and stir until moistened and combined. Spread mixture in an even layer onto the prepared baking sheet and pat down flat with a spatula.
3. Bake in preheated oven for 25 - 30 minutes or until golden brown, rotating the pan halfway through. (Do not stir granola while baking).
4. Remove pan from oven and allow granola to cool completely.
5. Once cool, add dried fruit according to personal choice. I use what I have to hand that may include dried cranberries, apricots, raisins and sultanas.
Break granola into clusters and store in an airtight container.
6. Serve with toppings of your choice.
